Ingredients
6 cups crispy rice cereal
1/4 cup unsalted butter
1 (10-ounce) bag mini marshmallows
1/2 cup creamy peanut butter
1 teaspoon vanilla extract
1/2 cup mini marshmallows (optional, for topping)
1/4 cup peanut butter drizzle or melted peanut butter (optional, for topping)
Instructions
- Grease a 9×13-inch baking dish with butter or cooking spray and set it aside.
- In a large saucepan, melt the butter over medium heat. Add the mini marshmallows and stir until completely melted and smooth.
- Stir in the peanut butter until fully incorporated, then remove from heat. Add the vanilla extract.
- Quickly pour the marshmallow-peanut butter mixture over the crispy rice cereal in a large mixing bowl. Stir until the cereal is evenly coated.
- Press the mixture into the prepared baking dish using a greased spatula or wax paper to smooth the top.
- If desired, sprinkle additional mini marshmallows on top and lightly press them into the surface.
- Drizzle with melted peanut butter for extra flavor.
