Ingredients
1 9-inch pie crust, homemade or store-bought
3 medium apples (Granny Smith or Honeycrisp), peeled, cored, and thinly sliced
2 tablespoons lemon juice
3 large eggs
3/4 cup granulated sugar
1 cup half-and-half
1 teaspoon vanilla extract
1/4 teaspoon salt
2 tablespoons all-purpose flour
1/2 teaspoon ground cinnamon
1 tablespoon butter, melted
Instructions
- Preheat oven to 375°F (190°C). Roll out the pie crust and fit it into a 9-inch pie dish. Prick the bottom with a fork and par-bake for 10 minutes. Let cool slightly.
- Toss the sliced apples with lemon juice and arrange evenly in the cooled pie crust.
- In a mixing bowl, whisk together eggs, sugar, half-and-half, vanilla, salt, flour, and cinnamon until smooth and well combined.
- Carefully pour the custard mixture over the apples, ensuring they are fully covered.
- Drizzle the melted butter over the top. Place the pie dish on a baking sheet to catch drips.
- Bake for 45–50 minutes, until the custard is set and the top is lightly golden.
- Allow the pie to cool to room temperature, then refrigerate for at least 2 hours before slicing and serving.
Notes
Granny Smith apples provide a tart contrast to the sweet custard; Honeycrisp offers a sweeter profile.
Letting the pie chill overnight enhances flavor and texture.
For a gluten-free version, use a gluten-free pie crust and 1:1 gluten-free flour blend.
