Description

A rustic and comforting French Chicken Casserole with golden-browned chicken thighs, mushrooms, and a rich white wine cream sauce — perfect for both weeknight meals and elegant gatherings.


Ingredients

2 pounds chicken thighs, bone-in, skin-on

Salt and pepper to taste

2 tablespoons olive oil

1 large onion, diced

3 cloves garlic, minced

10 ounces mushrooms, sliced

2 tablespoons flour

1 cup dry white wine

1 cup chicken broth

1 tablespoon Dijon mustard

1 tablespoon fresh thyme leaves

2 bay leaves

1/2 cup heavy cream

Fresh parsley, chopped (for garnish)


Instructions

  1. Preheat oven to 375°F (190°C).
  2. Season chicken thighs with salt and pepper.
  3. Heat olive oil in a large ovenproof skillet or Dutch oven over medium-high heat. Sear chicken skin-side down for 4-5 minutes per side. Remove and set aside.
  4. In the same skillet, sauté onion for 5 minutes until softened. Add garlic and cook for 1 minute.
  5. Add mushrooms and cook until they release juices and turn golden, about 6-8 minutes.
  6. Sprinkle flour over vegetables and stir to coat evenly.
  7. Pour in white wine, scraping to deglaze the pan.
  8. Stir in chicken broth, Dijon mustard, thyme, and bay leaves. Bring to a simmer.
  9. Return chicken to the skillet, skin-side up. Spoon some sauce over the top.
  10. Bake uncovered in the oven for 30 minutes.
  11. Stir in heavy cream and bake for an additional 10 minutes until sauce thickens slightly.
  12. Garnish with chopped parsley before serving.

Notes

Use dry white wine like Sauvignon Blanc or Chardonnay for best flavor.

Boneless, skinless chicken can be used but will cook faster.

Leeks or carrots can be substituted for mushrooms for a different flavor profile.

To make dairy-free, omit cream and use extra broth.

Reheat leftovers with a splash of broth or water to loosen the sauce.
