Description

French Onion Chicken & Rice is a comforting one-pan meal featuring tender chicken, caramelized onions, and seasoned rice, all topped with melted cheese. This flavorful and family-friendly dish is perfect for weeknight dinners or special occasions.


Ingredients

4 boneless, skinless chicken breasts

2 tablespoons olive oil

2 large onions, thinly sliced

3 cloves garlic, minced

1 cup long-grain white rice

2 1/2 cups chicken broth

1 teaspoon dried thyme

1/2 teaspoon salt (or to taste)

1/4 teaspoon black pepper

1 cup shredded Gruyere or Swiss cheese

Optional: Fresh parsley for garnish


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Heat olive oil in an oven-safe skillet over medium heat. Sear chicken breasts for 3-4 minutes per side until golden brown. Remove and set aside.
  3. In the same skillet, caramelize onions over medium heat for about 15 minutes, stirring occasionally. Add minced garlic and cook for 1 minute.
  4. Stir in rice, chicken broth, thyme, salt, and pepper. Nestle the chicken breasts on top of the rice mixture.
  5. Cover the skillet with a lid or foil and bake for 25-30 minutes, until rice is tender and chicken is cooked through.
  6. Sprinkle cheese over the dish and return to the oven for 5 minutes, or until the cheese is melted.
  7. Garnish with fresh parsley and serve warm.

Notes

Use long-grain white rice to avoid mushiness.
