Ingredients
For the Chicken:
4 boneless, skinless chicken breasts
2 tablespoons olive oil
Salt and pepper, to taste
1 teaspoon dried thyme
1 teaspoon garlic powder
1/2 teaspoon onion powder
For the French Onion Sauce:
2 tablespoons butter
2 large yellow onions, thinly sliced
2 cloves garlic, minced
1/2 cup beef broth
1/2 cup chicken broth
1 tablespoon Worcestershire sauce
1 tablespoon balsamic vinegar
1 teaspoon dried thyme
1 teaspoon sugar (optional)
For the Topping:
1 1/2 cups shredded Gruyère cheese (or Swiss cheese)
1/2 cup shredded mozzarella cheese
Instructions
- Prepare the Chicken:
Preheat the oven to 400°F (200°C). Season the chicken breasts with salt, pepper, thyme, garlic powder, and onion powder on both sides.
In a large skillet, heat olive oil over medium-high heat. Add chicken breasts and cook for 4-5 minutes per side until browned. Remove from the skillet and set aside. - Make the French Onion Sauce:
In the same skillet, melt butter over medium heat. Add onions with a pinch of salt and cook for 15-20 minutes, stirring occasionally, until caramelized and golden brown.
Add minced garlic and cook for 1-2 minutes until fragrant.
Stir in beef broth, chicken broth, Worcestershire sauce, balsamic vinegar, thyme, and sugar (if using). Let it simmer for 5-7 minutes until the sauce thickens slightly. - Assemble the Dish:
Return the chicken breasts to the skillet, nestling them into the onion sauce. Spoon sauce over the chicken and sprinkle shredded Gruyère and mozzarella over the top. - Bake:
Transfer the skillet to the oven and bake for 10-15 minutes or until the chicken reaches an internal temperature of 165°F (75°C) and the cheese is melted and bubbly. - Serve:
Let the chicken rest for a few minutes before serving. Spoon more caramelized onion sauce over the chicken and enjoy!
Notes
Substitute for Chicken: Try using chicken thighs for a juicier version.
Cheese Alternatives: If Gruyère isn’t available, Swiss cheese or a mix of sharp cheddar and mozzarella works well.
Vegetarian Version: Replace chicken with portobello mushrooms for a savory vegetarian alternative.
