Description

This French Onion Ground Beef and Rice Casserole is a comforting one-pan meal that combines caramelized onions, seasoned ground beef, fluffy rice, and savory beef broth, all topped with melted Swiss cheese and crispy French fried onions. Ingredients

1 pound ground beef

1 cup long-grain white rice

2 cups beef broth

1 large onion, thinly sliced

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried thyme

Salt and pepper to taste

1 cup shredded Swiss cheese

½ cup French fried onions (for topping)

Fresh parsley, chopped (for garnish)


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Heat olive oil in a large skillet over medium heat. Add sliced onions and sauté for 10-12 minutes until caramelized and golden brown.
  3. Add ground beef to the skillet and cook until browned, about 5-7 minutes. Drain excess fat.
  4. Season with garlic powder, onion powder, dried thyme, salt, and pepper. Stir to combine.
  5. In a large bowl, mix the beef and onion mixture with uncooked rice and beef broth.
  6. Grease a 9×13-inch baking dish, pour the mixture into it, and cover with aluminum foil. Bake for 30 minutes.
  7. Remove foil and sprinkle shredded Swiss cheese on top. Return to the oven and bake uncovered for 10-15 minutes until cheese is melted and bubbly.
  8. Let the casserole rest for 5 minutes before topping with French fried onions and garnishing with fresh parsley.

Notes

Cheese Options: Use cheddar, mozzarella, or Gruyère cheese for different flavors.

Storage: Store in the fridge for up to 3 days. Reheat in the oven at 350°F (175°C) for 15-20 minutes. This casserole can also be frozen for up to 3 months.

Variations: Swap ground beef for turkey or chicken, use brown rice or cauliflower rice for a healthier option, or add extra vegetables like mushrooms, bell peppers, or spinach.
