Description

These fresh vegetable tortilla roll ups are a colorful, crunchy, and creamy snack made with soft tortillas, smooth cream cheese, and vibrant vegetables. They are quick to prepare and perfect for appetizers, lunchboxes, or light meals.


Ingredients

4 large flour tortillas

1 cup cream cheese, softened

1 cup shredded carrots

1 cup baby spinach leaves

1/2 red bell pepper, thinly sliced

1/2 yellow bell pepper, thinly sliced

1/2 cucumber, julienned or thinly sliced

Salt to taste

Black pepper to taste


Instructions

  1. Lay the tortillas flat on a clean cutting board or work surface. If they feel stiff, warm them in the microwave for about 10 seconds to soften.
  2. Spread the softened cream cheese evenly over each tortilla, making sure to reach the edges.
  3. Arrange the vegetables over the cream cheese starting with baby spinach, followed by shredded carrots, sliced red and yellow bell peppers, and cucumber strips.
  4. Lightly season the vegetables with a pinch of salt and black pepper.
  5. Roll each tortilla tightly from one end to the other to form a firm log.
  6. Wrap the rolls in plastic wrap and refrigerate for about 30 minutes to help them hold their shape.
  7. Remove the wrap and slice each roll into 1-inch pieces. Arrange on a plate and serve fresh.

Notes

You can substitute whole wheat tortillas for a slightly nuttier flavor.

Herb or garlic flavored cream cheese can add extra flavor without additional seasoning.

Add avocado, shredded lettuce, or thinly sliced radishes for extra texture and variety.

For additional protein, include thin slices of turkey, grilled chicken, or replace the cream cheese with hummus.

Store leftovers in an airtight container in the refrigerator for up to 2 days.
