Description

Indulge in the authentic taste of Iceland with this Fridheimar Tomato Soup recipe. Fresh, organic tomatoes and a blend of aromatic herbs create a comforting and nutritious meal.


Ingredients

1.5 kg ripe tomatoes

1 onion, finely chopped

2 cloves of garlic, minced

2 tablespoons olive oil

2 tablespoons tomato paste

1/2 teaspoon sugar

1/2 teaspoon salt

Pinch of black pepper

1/2 cup fresh basil leaves

2 cups vegetable broth


Instructions

  1. Score and blanch tomatoes in boiling water for 1 minute. Peel and dice.
  2. Sauté onion and garlic in olive oil until translucent.
  3. Add tomatoes, tomato paste, sugar, salt, pepper, basil, and broth to the pot.
  4. Bring to a boil, then simmer for 30 minutes.
  5. Blend until smooth. Adjust seasoning to taste.

Notes

For a creamier soup, add heavy cream after blending.

Garnish with fresh basil or croutons before serving.
