Ingredients
1.5 kg ripe tomatoes
1 onion, finely chopped
2 cloves of garlic, minced
2 tablespoons olive oil
2 tablespoons tomato paste
1/2 teaspoon sugar
1/2 teaspoon salt
Pinch of black pepper
1/2 cup fresh basil leaves
2 cups vegetable broth
Instructions
- Score and blanch tomatoes in boiling water for 1 minute. Peel and dice.
- Sauté onion and garlic in olive oil until translucent.
- Add tomatoes, tomato paste, sugar, salt, pepper, basil, and broth to the pot.
- Bring to a boil, then simmer for 30 minutes.
- Blend until smooth. Adjust seasoning to taste.
Notes
For a creamier soup, add heavy cream after blending.
Garnish with fresh basil or croutons before serving.
