Breading:

½ cup breadcrumbs (plain or Italian)

2 ½ teaspoons seasoned salt

¾ teaspoon paprika

½ teaspoon cayenne pepper

1 ½ teaspoons black pepper

For the Mashed Potatoes:

2 pounds russet potatoes, peeled and cubed

½ cup whole milk

4 tablespoons unsalted butter

Salt and pepper to taste


Instructions

  1. Marinate the Chicken:
    • Pound chicken breasts to ½ inch thickness.
    • Whisk together buttermilk, eggs, and salt in a large bowl. Submerge chicken in marinade, cover, and refrigerate for 1-2 hours or overnight.
  2. Prepare the Breading:
    • In a shallow dish, combine flour, breadcrumbs, seasoned salt, paprika, cayenne pepper, and black pepper.
  3. Bread the Chicken:
    • Remove chicken from marinade and coat thoroughly in the breading mixture.

Notes
