Ingredients
1 lb ground beef
1 small onion, diced
1 packet (1 oz) taco seasoning
1 can (15 oz) chili beans
1 can (10 oz) diced tomatoes with green chilies
1 bag (9.25 oz) Fritos corn chips
2 cups shredded cheddar cheese
Optional toppings: sour cream, diced tomatoes, sliced jalapeños, chopped cilantro
Instructions
- Preheat your oven to 350°F (175°C).
- In a large skillet, cook the ground beef and diced onion over medium heat until the beef is browned and the onion is tender. Drain excess fat.
- Stir in the taco seasoning, chili beans, and diced tomatoes with green chilies. Cook for 5 minutes, stirring occasionally.
- In a 9×13-inch baking dish, layer half of the Fritos, then top with half of the beef mixture. Sprinkle with half of the cheddar cheese.
- Repeat the layers with the remaining Fritos, beef mixture, and cheese.
- Cover the dish with foil and bake for 20 minutes. Remove the foil and bake for an additional 5-10 minutes, until the cheese is bubbly.
- Serve hot with optional toppings such as sour cream, diced tomatoes, sliced jalapeños, or chopped cilantro.
Notes
For a lighter version, substitute ground turkey or chicken for ground beef.
To make a vegetarian option, replace beef with sautéed vegetables or canned beans.
You can prepare the beef mixture in advance for quicker assembly.
