1/4 cup coconut oil, melted
2 tsp vanilla extract
1/2 tsp baking powder
1/2 cup chocolate chips (dark or semi-sweet for a richer flavor)
Instructions
- Preheat your oven to 350°F (175°C). Grease or line a mini muffin tin with paper liners.
- In a food processor, combine black beans, cocoa powder, oats, salt, maple syrup, coconut sugar, melted coconut oil, vanilla extract, and baking powder.
- Blend until completely smooth, scraping down the sides as needed.
- Stir in the chocolate chips, then spoon the batter evenly into the prepared muffin tin.
