Ingredients

1 can (15 oz) black beans, drained and rinsed

2 tbsp cocoa powder (unsweetened)

1/2 cup rolled oats

1/4 tsp salt

1/3 cup pure maple syrup or honey

2 tbsp coconut sugar or regular sugar

1/4 cup coconut oil, melted

2 tsp vanilla extract

1/2 tsp baking powder

1/2 cup chocolate chips (dark or semi-sweet for a richer flavor)


Instructions

  1. Preheat your oven to 350°F (175°C). Grease or line a mini muffin tin with paper liners.
  2. In a food processor, combine black beans, cocoa powder, oats, salt, maple syrup, coconut sugar, melted coconut oil, vanilla extract, and baking powder.
  3. Blend until completely smooth, scraping down the sides as needed.
  4. Stir in the chocolate chips, then spoon the batter evenly into the prepared muffin tin.
