1 large egg, room temperature
75 g (⅓ cup plus 1 tablespoon) granulated sugar
12 g (1.5 tablespoons) cornstarch
12 g (2 tablespoons) cocoa powder
⅛ teaspoon baking powder
⅛ teaspoon salt
Optional: 56 g (⅓ cup) dark chocolate chips
Instructions
- Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Melt chocolate and butter in a heatproof bowl until smooth; cool slightly.
- Whisk egg and sugar until pale and thick (1-2 minutes). Stir in melted chocolate.
- Sift cornstarch, cocoa, baking powder, and salt in a separate bowl. Fold into chocolate mixture. Add optional chocolate chips.
- Rest batter for 10-15 minutes (chill if warm).
- Drop 1.5-tablespoon portions onto the baking sheet, spacing them 2 inches apart.
- Bake at 350°F (175°C) for 8-10 minutes until tops are crackled and centers soft.
