Ingredients
6 cups frozen shredded hash brown potatoes, thawed
1 (10.5-ounce) can condensed cream of chicken soup
1 cup sour cream
1/2 cup unsalted butter, melted
2 cups shredded cheddar cheese
1/4 cup finely chopped onion (optional)
1 teaspoon garlic powder
Salt and pepper, to taste
2 cups cornflakes, crushed
2 tablespoons butter, melted (for topping)
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking dish.
- In a large bowl, mix the cream of chicken soup, sour cream, melted butter, garlic powder, salt, and pepper until smooth.
- Add the shredded cheddar cheese and onion (if using), and stir to combine.
- Gently fold in the thawed hash brown potatoes until evenly coated.
- Spread the mixture into the prepared baking dish.
- In a small bowl, combine crushed cornflakes with 2 tablespoons of melted butter. Sprinkle over the casserole.
- Bake for 40–45 minutes, or until bubbly and golden brown.
- Let cool slightly before serving.
Notes
For added flavor, try adding cooked bacon or diced ham.
You can use cream of mushroom soup for a vegetarian version.
To make ahead, prepare the casserole without the topping, refrigerate, and bake when ready.
