Description

Funeral Potatoes are a classic, comforting casserole dish made with creamy hash browns, cheese, and a crispy cornflake topping. Perfect for holidays, gatherings, or as a hearty side dish, this easy-to-make recipe is sure to satisfy every crowd.


Ingredients

6 cups frozen shredded hash brown potatoes, thawed

1 (10.5-ounce) can condensed cream of chicken soup

1 cup sour cream

1/2 cup unsalted butter, melted

2 cups shredded cheddar cheese

1/4 cup finely chopped onion (optional)

1 teaspoon garlic powder

Salt and pepper, to taste

2 cups cornflakes, crushed

2 tablespoons butter, melted (for topping)


Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. In a large bowl, mix the cream of chicken soup, sour cream, melted butter, garlic powder, salt, and pepper until smooth.
  3. Add the shredded cheddar cheese and onion (if using), and stir to combine.
  4. Gently fold in the thawed hash brown potatoes until evenly coated.
  5. Spread the mixture into the prepared baking dish.
  6. In a small bowl, combine crushed cornflakes with 2 tablespoons of melted butter. Sprinkle over the casserole.
  7. Bake for 40–45 minutes, or until bubbly and golden brown.
  8. Let cool slightly before serving.

Notes

For added flavor, try adding cooked bacon or diced ham.

You can use cream of mushroom soup for a vegetarian version.

To make ahead, prepare the casserole without the topping, refrigerate, and bake when ready.
