Description

Savory and hearty one-pan Garlic Butter Beef Bites and Potatoes with tender sirloin cubes, crispy baby potatoes, and a rich garlic butter sauce. A comforting meal perfect for weeknights or weekends.


Ingredients

1.5 lbs sirloin steak, cut into 1-inch cubes

1.5 lbs baby potatoes, halved

4 tablespoons unsalted butter, divided

1 tablespoon olive oil

5 cloves garlic, minced

1 teaspoon smoked paprika

1/2 teaspoon onion powder

1 tablespoon fresh parsley, chopped

Salt and black pepper, to taste


Instructions

  1. Bring a large pot of salted water to a boil. Add halved baby potatoes and parboil for 8–10 minutes until fork-tender. Drain and set aside.
  2. In a large skillet over medium-high heat, melt 2 tablespoons of butter with the olive oil.
  3. Add steak bites in a single layer, seasoning with salt, pepper, smoked paprika, and onion powder. Cook in batches if necessary.
  4. Sear beef for 2–3 minutes per side until browned and cooked to desired doneness. Remove steak from skillet and set aside.
  5. In the same skillet, melt remaining 2 tablespoons of butter over medium heat. Add garlic and sauté for 30 seconds until fragrant.
  6. Add parboiled potatoes to the skillet and cook for 6–8 minutes, stirring occasionally, until golden and crispy.
  7. Return beef bites to the skillet and toss with garlic butter and chopped parsley.
  8. Serve warm, optionally garnished with extra parsley.

Swap sirloin with ribeye or strip steak for added tenderness.
