Description

Tender cheese tortellini tossed with juicy ground beef in a rich garlic butter sauce. This comforting, hearty dish comes together in just 20 minutes and is perfect for a quick weeknight dinner.

Ingredients

1 lb ground beef

1 package (20 oz) refrigerated cheese tortellini

3 tablespoons unsalted butter

4 cloves garlic, minced

1/2 teaspoon red pepper flakes (optional)

Salt and black pepper to taste

1/4 cup grated Parmesan cheese

2 tablespoons chopped fresh parsley

1 tablespoon olive oil

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add ground beef and cook until browned, about 6–8 minutes, breaking it apart as it cooks. Season with salt and black pepper. Drain excess grease if needed.
  2. Meanwhile, bring a large pot of salted water to a boil. Cook the tortellini according to package directions (usually 3–5 minutes). Drain and set aside.
  3. Reduce skillet heat to medium and add butter to the cooked beef. Once melted, stir in minced garlic and red pepper flakes. Cook for 1–2 minutes until fragrant.
  4. Add the cooked tortellini to the skillet and gently toss to coat with the garlic butter beef mixture.
  5. Stir in grated Parmesan and chopped parsley until evenly combined.
  6. Serve warm with extra Parmesan on top if desired.

Notes

Use Italian sausage instead of ground beef for a spicier version.

For a vegetarian option, omit the meat and add sautéed mushrooms or spinach.

To make it creamier, add a splash of cream or a spoonful of cream cheese.

Do not overcook the tortellini to avoid mushiness.

Leftovers store well in the fridge for up to 3 days.
