Description
Tender cheese tortellini tossed with juicy ground beef in a rich garlic butter sauce. This comforting, hearty dish comes together in just 20 minutes and is perfect for a quick weeknight dinner.
Ingredients
1 lb ground beef
1 package (20 oz) refrigerated cheese tortellini
3 tablespoons unsalted butter
4 cloves garlic, minced
1/2 teaspoon red pepper flakes (optional)
Salt and black pepper to taste
1/4 cup grated Parmesan cheese
2 tablespoons chopped fresh parsley
1 tablespoon olive oil
Instructions
- Heat olive oil in a large skillet over medium-high heat. Add ground beef and cook until browned, about 6–8 minutes, breaking it apart as it cooks. Season with salt and black pepper. Drain excess grease if needed.
- Meanwhile, bring a large pot of salted water to a boil. Cook the tortellini according to package directions (usually 3–5 minutes). Drain and set aside.
- Reduce skillet heat to medium and add butter to the cooked beef. Once melted, stir in minced garlic and red pepper flakes. Cook for 1–2 minutes until fragrant.
- Add the cooked tortellini to the skillet and gently toss to coat with the garlic butter beef mixture.
- Stir in grated Parmesan and chopped parsley until evenly combined.
- Serve warm with extra Parmesan on top if desired.
Notes
Use Italian sausage instead of ground beef for a spicier version.
For a vegetarian option, omit the meat and add sautéed mushrooms or spinach.
To make it creamier, add a splash of cream or a spoonful of cream cheese.
Do not overcook the tortellini to avoid mushiness.
Leftovers store well in the fridge for up to 3 days.
