Ingredients
4 boneless, skinless chicken thighs
1 lb baby potatoes, quartered
5 tablespoons unsalted butter, divided
4 cloves garlic, minced
1 teaspoon Italian seasoning
1 teaspoon paprika
Salt and pepper, to taste
1 tablespoon olive oil
Fresh parsley, chopped (for garnish)
Instructions
- Season the chicken thighs with salt, pepper, paprika, and Italian seasoning. Set aside.
- Heat 1 tablespoon of olive oil and 2 tablespoons of butter in a large skillet over medium heat. Add the potatoes and cook for 10-12 minutes until golden and tender. Remove and set aside.
- In the same skillet, melt the remaining butter and cook the chicken thighs for 6-7 minutes per side until golden and cooked through. Remove and set aside.
- Add minced garlic to the skillet and sauté for 1-2 minutes until fragrant.
- Return the potatoes and chicken to the skillet and toss them in the garlic butter sauce. Cook for 2-3 minutes to combine flavors.
- Garnish with fresh parsley and serve hot.
