Description

Garlic Buttered Noodles is a simple, comforting pasta dish made with tender noodles tossed in rich butter, fragrant garlic, and freshly grated Parmesan. Ready in just 20 minutes, it is a cozy and satisfying meal perfect for busy weeknights.


Ingredients

8 ounces dried pasta noodles (long or short pasta)

4 tablespoons butter, divided

2 garlic cloves, minced

1/2 cup grated Parmesan cheese, plus more for serving

Salt and ground black pepper, to taste

Chopped parsley, optional


Instructions

  1. Bring a large pot of salted water to a boil and cook the pasta according to package directions until al dente. Reserve about 3/4 cup of the pasta cooking water before draining.
  2. In a large skillet or Dutch oven, melt 3 tablespoons of butter over low heat. Add the minced garlic and sauté gently, stirring often, until fragrant without browning.
  3. Add the drained pasta to the skillet and toss well to coat in the garlic butter.
  4. Stir in the grated Parmesan cheese and continue tossing until the cheese melts and clings to the noodles.
  5. Add a few spoonfuls of the reserved pasta water along with the remaining tablespoon of butter. Toss until the noodles are glossy and evenly coated, adding more pasta water as needed to create a silky sauce.
  6. Season with salt and ground black pepper to taste. Serve immediately with extra Parmesan and chopped parsley if desired.

Notes

Add sautéed mushrooms or spinach for extra flavor and texture.

Sprinkle in red pepper flakes while cooking the garlic for a hint of heat.

Stir in a squeeze of fresh lemon juice at the end for brightness.

Top with grilled chicken or shrimp for added protein.

Store leftovers in an airtight container in the refrigerator for up to 3 days and reheat gently with a splash of water or butter.

Freezing is not recommended as the texture may become mushy after thawing.
