Ingredients

1 ½ lbs chicken breast, cut into bite-sized pieces

1 red bell pepper, cut into chunks

1 yellow bell pepper, cut into chunks

1 red onion, cut into wedges

1 zucchini, sliced into thick rounds

1/4 cup olive oil

3 cloves garlic, minced

2 tablespoons lemon juice

1 tablespoon fresh rosemary, finely chopped

1 tablespoon fresh thyme leaves

1 teaspoon dried oregano

1 teaspoon paprika

Salt and pepper to taste


Instructions

  1. In a small bowl, whisk together olive oil, garlic, lemon juice, rosemary, thyme, oregano, paprika, salt, and pepper.
  2. Place chicken in a resealable bag or large bowl. Pour marinade over the chicken, ensuring all pieces are well coated. Cover and refrigerate for 30 minutes to 4 hours.
  3. Preheat the grill to medium-high heat (375°F/190°C).
  4. Thread chicken, bell peppers, onion, and zucchini onto skewers, alternating ingredients for a colorful presentation.
  5. Grill skewers for 10-12 minutes, turning occasionally, until chicken is fully cooked and vegetables are slightly charred.

Marinate chicken longer for more intense flavor (up to 4 hours).

Use metal or pre-soaked wooden skewers to prevent burning.
