Description

Garlic Parmesan Hasselback Potatoes are the ultimate side dish for any occasion. Crispy on the outside and tender on the inside, these potatoes are infused with buttery garlic and Parmesan flavors. Ingredients

4 medium russet potatoes

3 tablespoons unsalted butter, melted

3 tablespoons olive oil

4 cloves garlic, minced

1/2 teaspoon salt

1/4 teaspoon black pepper

1/2 teaspoon dried thyme (or fresh, chopped)

1/4 cup grated Parmesan cheese

Fresh parsley, chopped (for garnish)


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and dry the potatoes thoroughly. Slice them into thin, even layers, leaving about 1/4 inch intact at the bottom.
  3. Arrange the potatoes on a parchment-lined baking sheet.
  4. In a small bowl, combine melted butter, olive oil, garlic, salt, pepper, and thyme. Brush this mixture over the potatoes.
  5. Roast for 40–45 minutes, basting halfway through with remaining garlic-butter mixture.
  6. Remove from the oven, sprinkle with Parmesan cheese, and return to the oven for 5 minutes to melt.
  7. Garnish with fresh parsley and serve warm.

Notes

To prevent cutting all the way through the potatoes, use chopsticks or wooden spoons as guides.

Yukon Gold or red potatoes can be substituted for a slightly different texture.

For a vegan option, replace butter with vegan margarine and Parmesan with nutritional yeast.
