Ingredients
12 oz spaghetti or fettuccine
4 cups vegetable broth (or chicken broth)
1 tablespoon olive oil
4 cloves garlic, minced
1 cup grated parmesan cheese
½ cup heavy cream or milk
2 tablespoons unsalted butter
1 teaspoon dried Italian seasoning
Salt and pepper to taste
Fresh parsley, chopped (for garnish)
Instructions
- Heat olive oil in a large pot over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
- Pour in the vegetable broth and bring to a boil.
- Add the pasta and cook according to package instructions, stirring occasionally. (Do not drain the liquid.)
- Once the pasta is al dente, reduce heat to low and stir in butter, heavy cream, and parmesan cheese until melted and creamy.
- Add Italian seasoning, salt, and pepper to taste.
- Let it simmer for 1-2 minutes until the sauce thickens slightly.
- Remove from heat, garnish with parsley, and serve immediately.
Notes
Add protein: Try adding grilled chicken, shrimp, or crispy bacon for extra flavor.
Make it spicier: A pinch of red pepper flakes adds heat.
Vegetarian twist: Sautéed mushrooms, spinach, or sun-dried tomatoes work well.
Lighter version: Swap heavy cream for half-and-half or evaporated milk.
Storage: Keep leftovers in an airtight container in the fridge for up to 3 days. Reheat with a splash of milk or broth.
