Ingredients

1 cup unsalted butter, softened

1/2 cup powdered sugar (plus extra for rolling)

2 tsp molasses

2 cups all-purpose flour

1/2 cup finely chopped pecans or walnuts (optional)

1 tsp vanilla extract


Instructions

  1. Prepare the Dough:
    • Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
    • Cream softened butter and powdered sugar until light and fluffy.
    • Add molasses, ginger, cinnamon, cloves, and salt. Mix well.
    • Gradually incorporate flour until dough forms. Stir in nuts (if using) and vanilla extract.
  2. Shape the Cookies:
    • Roll dough into 1-inch balls and place on baking sheet, spacing 2 inches apart.
    • Bake for 10-12 minutes, until edges are lightly golden.
  3. Coat in Powdered Sugar:
    • Cool cookies for 5 minutes. Roll warm cookies in powdered sugar.
    • Once completely cool, roll in powdered sugar again for an extra snowy look.
  4. Serve:

Notes

For a nut-free version, omit the nuts.

For richer flavor, use dark molasses or increase the amount slightly.
