Ingredients
For the Muffins:
1 3/4 cups all-purpose flour
1/2 teaspoon baking soda
1 teaspoon baking powder
1 1/2 teaspoons ground ginger
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1/2 teaspoon salt
1/2 cup brown sugar
1/2 cup unsweetened applesauce
1/2 cup molasses
1/4 cup melted coconut oil (or vegetable oil)
1/3 cup plant-based milk (or regular milk)
1 teaspoon vanilla extract
For the Glaze:
1/2 cup powdered sugar
1–2 tablespoons milk (adjust for consistency)
1/2 teaspoon vanilla extract
Instructions
- Preheat oven to 350°F (175°C) and prepare a 12-cup muffin tin with liners or grease it.
- In a large bowl, whisk together the dry ingredients: flour, baking soda, baking powder, spices, and salt.
- In another bowl, mix the wet ingredients: brown sugar, applesauce, molasses, melted oil, milk, and vanilla.
- Combine the wet and dry mixtures, stirring just until combined. Avoid overmixing.
- Divide batter evenly into muffin cups, filling 3/4 full.
- Bake for 18–22 minutes, or until a toothpick comes out clean. Cool for 5 minutes in the tin, then transfer to a rack.
- For the glaze, mix powdered sugar, milk, and vanilla until smooth. Drizzle over cooled muffins.
Notes
Use gluten-free flour for a gluten-free option.
Coconut oil can be swapped for vegetable oil.
Orange zest can be added for a zesty twist.
