Ingredients

For the Brioche Dough:

2 1/4 teaspoons active dry yeast

1/2 cup warm milk (or dairy-free milk)

1/4 cup granulated sugar

2 1/2 cups gluten-free all-purpose flour (with xanthan gum)

1 teaspoon salt

1 teaspoon ground cinnamon

3 large eggs

1/2 cup unsalted butter, softened (or dairy-free butter)

1 teaspoon vanilla extract

For the Apple Filling:

2 large apples, peeled and diced

2 tablespoons granulated sugar

1 teaspoon ground cinnamon

1 tablespoon lemon juice

For the Crumble Topping:

1/2 cup gluten-free all-purpose flour

1/4 cup granulated sugar

1/4 cup unsalted butter, cold and cubed (or dairy-free butter)

1/2 teaspoon ground cinnamon

Instructions

  1. Prepare the Brioche Dough:
    • In a small bowl, combine warm milk, sugar, and yeast. Let sit for 5-10 minutes until frothy.
    • In a large bowl, whisk together gluten-free flour, salt, and cinnamon.
    • Add eggs, butter, and vanilla extract to the yeast mixture, then combine with dry ingredients. Stir until a sticky dough forms.
    • Cover dough with a towel or plastic wrap and let rise in a warm place for 1-1.5 hours, or until doubled in size.
  2. Make the Apple Filling:
    • In a saucepan, combine diced apples, sugar, cinnamon, and lemon juice. Cook over medium heat for 5-7 minutes until apples are tender but still hold shape. Let cool.
  3. Prepare the Crumble Topping:
    • In a bowl, mix gluten-free flour, sugar, and cinnamon. Add cold butter and cut into mixture until it resembles coarse crumbs. Set aside.
  4. Assemble the Rolls:
    • Punch down the dough and roll it into a 12×9-inch rectangle.
    • Spread the apple filling over the dough, leaving a border. Roll up the dough tightly from the long side and slice into 9-10 even rolls.
    • Place rolls in a greased 9×9-inch baking dish and sprinkle crumble topping on top.
    • Let rolls rise for 30 minutes while preheating the oven to 350°F (175°C).
  5. Bake:
    • Bake for 25-30 minutes, until golden brown and the crumble topping is crispy. Let cool for 10-15 minutes before serving.

Notes

Dairy-Free Option: Substitute butter with dairy-free butter and use almond or oat milk.

Add Nuts: Chopped walnuts or pecans can be added to the crumble for extra crunch.

Spices: Experiment with a pinch of nutmeg or allspice in the apple filling for a unique flavor.

Sweeteners: Try maple syrup or honey instead of granulated sugar for a different sweetness.
