Ingredients

For the Dough:

2 1/4 tsp active dry yeast

1/2 cup warm milk (dairy or non-dairy)

1/4 cup granulated sugar

2 large eggs

1/2 cup unsalted butter, melted

2 tsp vanilla extract

3 cups gluten-free all-purpose flour (with xanthan gum)

1 tsp salt

1 tsp baking powder

For the Filling:

1/2 cup unsalted butter, melted

1 cup brown sugar

1 tbsp ground cinnamon

1/4 tsp salt

For the Glaze (optional):

1/2 cup powdered sugar

1 tbsp milk

1/2 tsp vanilla extract

Instructions

  1. Activate the Yeast:
Combine warm milk, sugar, and yeast. Stir and let sit for 5-10 minutes until frothy.
  2. Make the Dough:
In a large bowl, mix gluten-free flour, salt, and baking powder. Add yeast mixture, eggs, melted butter, and vanilla. Stir until a soft dough forms. Knead for 3-5 minutes.
  3. Let the Dough Rise:
Cover with a towel and let it rise in a warm spot for 1-1.5 hours until doubled in size.
  4. Prepare the Filling:
Mix brown sugar, cinnamon, and salt in a small bowl.
  5. Roll Out the Dough:
Roll the risen dough on a floured surface into a rectangle (1/4 inch thick). Brush with melted butter and sprinkle cinnamon-sugar mixture evenly.
  6. Assemble the Bread:
Cut dough into 2-inch strips, stack, and slice into squares. Place vertically in a greased loaf pan. Cover and let rise for 30 minutes.
  7. Bake:
Preheat oven to 350°F (175°C). Bake for 30-35 minutes until golden brown. Cover with foil if browning too quickly.
  8. Optional Glaze:
Mix powdered sugar, milk, and vanilla. Drizzle over warm bread.
  9. Serve:
Cool slightly and pull apart to enjoy!
