Ingredients
2 1/2 cups gluten-free all-purpose flour (with xanthan gum if not included)
1/2 teaspoon baking powder

1/2 cup (1 stick) unsalted butter, softened
4 ounces cream cheese, softened
3/4 cup granulated sugar
1 large egg
1 teaspoon pure vanilla extract
Optional: 1/2 teaspoon almond extract
Instructions
- Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a medium bowl, whisk together gluten-free flour, baking powder, and salt.
- In a large bowl, cream butter, cream cheese, and sugar until light and fluffy (2-3 minutes).
- Beat in egg, vanilla extract, and almond extract (if using). Mix until smooth.
- Gradually add dry ingredients to the wet ingredients, mixing until dough forms. If the dough is too soft, chill for 30 minutes.
- Roll dough into 1-inch balls, place on baking sheets, and flatten slightly.
- Bake for 10-12 minutes, until edges are set and bottoms are lightly golden. Avoid overbaking.
- Cool cookies for 5 minutes on the baking sheets, then transfer to a wire rack to cool completely.
