Description

Ingredients

2 1/2 cups gluten-free all-purpose flour (with xanthan gum if not included)

1/2 teaspoon baking powder

1/4 teaspoon salt

1/2 cup (1 stick) unsalted butter, softened

4 ounces cream cheese, softened

3/4 cup granulated sugar

1 large egg

1 teaspoon pure vanilla extract

Optional: 1/2 teaspoon almond extract


Instructions

  1. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a medium bowl, whisk together gluten-free flour, baking powder, and salt.
  3. In a large bowl, cream butter, cream cheese, and sugar until light and fluffy (2-3 minutes).
  4. Beat in egg, vanilla extract, and almond extract (if using). Mix until smooth.
  5. Gradually add dry ingredients to the wet ingredients, mixing until dough forms. If the dough is too soft, chill for 30 minutes.
  6. Roll dough into 1-inch balls, place on baking sheets, and flatten slightly.
  7. Bake for 10-12 minutes, until edges are set and bottoms are lightly golden. Avoid overbaking.
  8. Cool cookies for 5 minutes on the baking sheets, then transfer to a wire rack to cool completely.
  9. Decorate as desired with icing, sprinkles, or leave plain.

Notes

Chill dough if it becomes sticky for easy handling.

Store in an airtight container at room temperature for 4 days or in the refrigerator for up to 1 week.

Freeze baked cookies for up to 3 months and thaw at room temperature before serving.
