Ingredients
For the Peach Filling:

1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 tablespoon cornstarch (optional, for thickening)
For the Topping:
1 cup gluten-free all-purpose flour (make sure it contains xanthan gum)
1/4 cup coconut sugar (or regular sugar)
1/2 teaspoon baking powder
1/4 teaspoon salt
1/4 cup cold unsalted butter, cubed
1/4 cup unsweetened almond milk (or any milk of choice)
1/2 teaspoon vanilla extract
Instructions
- Preheat the oven to 375°F (190°C) and grease an 8×8-inch baking dish (or a similar-sized casserole dish) with butter or cooking spray.
- In a medium bowl, combine the sliced peaches, sugar, lemon juice, cinnamon, nutmeg, and cornstarch (if using). Toss until well coated and pour into the prepared baking dish.
- In another bowl, whisk together the gluten-free flour, coconut sugar, baking powder, and salt.
- Add the cubed cold butter to the flour mixture. Use a pastry cutter or your fingers to incorporate the butter until the mixture resembles coarse crumbs.
- Stir in the almond milk and vanilla extract until just combined. The dough will be thick but spoonable.
- Drop spoonfuls of the biscuit topping evenly over the peach filling, leaving some of the peach filling visible.
- Bake for 30-35 minutes, or until the topping is golden brown and the peach filling is bubbling.
- Let cool slightly before serving. Serve with vanilla ice cream or whipped cream if desired.
