Ingredients

For the Peach Filling:

4 cups fresh peaches, peeled and sliced (or 2 cans of peaches in light syrup, drained)

1 tablespoon lemon juice

1 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1 tablespoon cornstarch (optional, for thickening)

For the Topping:

1 cup gluten-free all-purpose flour (make sure it contains xanthan gum)

1/4 cup coconut sugar (or regular sugar)

1/2 teaspoon baking powder

1/4 teaspoon salt

1/4 cup cold unsalted butter, cubed

1/4 cup unsweetened almond milk (or any milk of choice)

1/2 teaspoon vanilla extract


Instructions

  1. Preheat the oven to 375°F (190°C) and grease an 8×8-inch baking dish (or a similar-sized casserole dish) with butter or cooking spray.
  2. In a medium bowl, combine the sliced peaches, sugar, lemon juice, cinnamon, nutmeg, and cornstarch (if using). Toss until well coated and pour into the prepared baking dish.
  3. In another bowl, whisk together the gluten-free flour, coconut sugar, baking powder, and salt.
  4. Add the cubed cold butter to the flour mixture. Use a pastry cutter or your fingers to incorporate the butter until the mixture resembles coarse crumbs.
  5. Stir in the almond milk and vanilla extract until just combined. The dough will be thick but spoonable.
  6. Drop spoonfuls of the biscuit topping evenly over the peach filling, leaving some of the peach filling visible.
  7. Bake for 30-35 minutes, or until the topping is golden brown and the peach filling is bubbling.

Notes

Frozen peaches: You can use frozen peaches if fresh ones are not available, but make sure to thaw and drain them to avoid excess moisture.
