Ingredients
1 lb boneless, skinless chicken thighs or breasts
1 tbsp olive oil
1 medium onion, chopped
3 cloves garlic, minced
1 tbsp fresh ginger, grated
2 tsp ground turmeric
1 tsp ground cumin
½ tsp black pepper
6 cups low-sodium chicken broth
2 medium carrots, sliced
2 celery stalks, chopped
1 cup chopped kale or spinach
Salt to taste
Fresh lemon juice (optional, for serving)
Fresh cilantro, for garnish
Instructions
- Heat olive oil in a large pot over medium heat until shimmering.
- Add chopped onion and sauté for 3–4 minutes until soft and translucent.
- Stir in garlic and grated ginger, cooking for about 1 minute until aromatic.
- Add turmeric, cumin, and black pepper; stir to coat the aromatics with spices.
- Add the chicken and pour in the chicken broth. Bring to a boil.
- Reduce heat to a simmer, cover, and cook for 30 minutes until chicken is cooked through.
- Remove chicken, shred it with two forks, and return it to the pot.
- Add sliced carrots and chopped celery. Simmer for another 10–15 minutes until vegetables are soft.
- Stir in chopped kale or spinach and cook for 3–5 minutes until wilted.
- Adjust salt to taste and serve hot with optional lemon juice and fresh cilantro.

Use rotisserie chicken for a quicker version.
Swap kale for spinach for a softer texture.
Add sweet potatoes or quinoa for a heartier soup.
Stir in coconut milk at the end for creaminess.
