Description

Ingredients

1 ½ cups all-purpose flour

½ cup granulated sugar

1 teaspoon baking powder

½ teaspoon baking soda

½ teaspoon salt

½ teaspoon ground cinnamon

½ cup milk

⅓ cup unsalted butter, melted

1 large egg

1 teaspoon vanilla extract

¼ cup granulated sugar (for topping)

1 teaspoon ground cinnamon (for topping)


Instructions

  1. Preheat the oven to 350°F (175°C). Line a muffin tin with liners or grease it well.
  2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and cinnamon.
  3. In a separate bowl, whisk together the milk, melted butter, egg, and vanilla extract.
  4. Gradually add the wet ingredients to the dry ingredients, stirring just until combined. Be careful not to overmix.
  5. Fill the muffin cups about ¾ full with the batter.
  6. Bake in the preheated oven for 18-20 minutes, or until the muffins are golden brown and a toothpick inserted comes out clean.
  7. While the muffins are baking, mix the ¼ cup sugar and 1 teaspoon cinnamon in a small bowl.
  8. Once the muffins are done, remove them from the oven and let them cool slightly. While they are still warm, dip the tops of the muffins into melted butter, then roll them in the cinnamon sugar mixture.
  9. Let them cool slightly before enjoying them warm.

Notes

For a glazed version, drizzle a simple glaze made of powdered sugar and milk over the muffins once they’ve cooled slightly.

You can add chopped apples or berries to the batter for a flavor twist.

Swap out some or all of the all-purpose flour for whole wheat flour for a denser version.

Replace cinnamon with pumpkin spice for a seasonal flavor.
