Ingredients
1 pre-made pizza dough or crust
1/2 cup pesto sauce
1 cup shredded mozzarella cheese
1/2 cup crumbled feta cheese
1 cup marinated artichoke hearts, drained and chopped
1/2 cup baby spinach leaves
1/4 cup sliced green olives
1/4 cup thinly sliced red onions
Fresh arugula, for garnish
Olive oil, for drizzling
Salt and pepper, to taste
Instructions
- Preheat your oven to 475°F (245°C). If using a pizza stone, place it in the oven to heat up.
- Roll out the pizza dough on a floured surface to your desired thickness. Transfer to a pizza peel or a baking sheet lined with parchment paper.
- Spread pesto sauce evenly over the pizza dough, leaving a small border around the edges.
- Sprinkle shredded mozzarella cheese over the pesto sauce.
- Evenly distribute crumbled feta cheese, chopped artichoke hearts, baby spinach leaves, sliced green olives, and thinly sliced red onions over the pizza.
- Transfer to the oven (onto the pizza stone if using) and bake for 10-12 minutes, or until the crust is golden and the cheese is melted and bubbly.
- Remove from the oven, let cool slightly, then top with fresh arugula and drizzle with olive oil. Season with salt and pepper to taste.
- Slice and serve immediately.

For a vegetarian version, ensure the pesto sauce does not contain non-vegetarian ingredients like anchovies.
