Ingredients

1 pre-made pizza dough or crust

1/2 cup pesto sauce

1 cup shredded mozzarella cheese

1/2 cup crumbled feta cheese

1 cup marinated artichoke hearts, drained and chopped

1/2 cup baby spinach leaves

1/4 cup sliced green olives

1/4 cup thinly sliced red onions

Fresh arugula, for garnish

Olive oil, for drizzling

Salt and pepper, to taste


Instructions

  1. Preheat your oven to 475°F (245°C). If using a pizza stone, place it in the oven to heat up.
  2. Roll out the pizza dough on a floured surface to your desired thickness. Transfer to a pizza peel or a baking sheet lined with parchment paper.
  3. Spread pesto sauce evenly over the pizza dough, leaving a small border around the edges.
  4. Sprinkle shredded mozzarella cheese over the pesto sauce.
  5. Evenly distribute crumbled feta cheese, chopped artichoke hearts, baby spinach leaves, sliced green olives, and thinly sliced red onions over the pizza.
  6. Transfer to the oven (onto the pizza stone if using) and bake for 10-12 minutes, or until the crust is golden and the cheese is melted and bubbly.
  7. Remove from the oven, let cool slightly, then top with fresh arugula and drizzle with olive oil. Season with salt and pepper to taste.
  8. Slice and serve immediately.

Notes

For a vegetarian version, ensure the pesto sauce does not contain non-vegetarian ingredients like anchovies.

Feel free to substitute the feta cheese with goat cheese or ricotta, and adjust toppings based on your preferences.
