Ingredients
Pizza dough (store-bought or homemade)
Olive oil (for brushing)
Fresh goat cheese (about 8 oz)
Honey (to drizzle)
Fresh thyme or rosemary (for garnish, optional)
Salt and pepper (to taste)
Arugula (optional, for topping)
Instructions
- Prepare the Dough:
- If using store-bought pizza dough, let it sit at room temperature for about 30 minutes to make it easier to work with.
- Roll out the dough on a lightly floured surface to your desired thickness.
- Preheat the Grill:
- Preheat your grill to medium-high heat. If you have a pizza stone, place it on the grill to heat up.
- Grill the Pizza Dough:
- Brush one side of the rolled-out dough with olive oil.
- Place the dough oil-side down on the grill. Close the grill lid and cook for about 2-3 minutes, until the bottom is lightly charred and crispy.
- Brush the top side with olive oil and flip the dough. Close the lid and cook for another 2-3 minutes.
- Add the Toppings:
- Once the dough is grilled, remove it from the grill.
- Spread the goat cheese evenly over the top of the dough.
- Drizzle with honey.
- Season with salt and pepper to taste.
- If using, sprinkle fresh thyme or rosemary leaves over the pizza.
- Final Grill:
- Return the pizza to the grill, close the lid, and cook for an additional 2-3 minutes until the cheese is warmed and slightly melted.
- Serve:
- Remove the pizza from the grill.
- If desired, top with a handful of fresh arugula.
- Slice and serve immediately.
Notes
This pizza is best enjoyed fresh off the grill to maintain its crispy texture.
Experiment with different herbs or add additional toppings like prosciutto for more variety.
