Ingredients
1 tablespoon sesame oil
2 garlic cloves, minced
1-inch piece of ginger, grated
1 liter low-sodium vegetable broth
2 tablespoons low-sodium soy sauce
1 tablespoon rice vinegar
1/2 tablespoon miso paste (optional)
200g mushrooms, thinly sliced (shiitake or chestnut)
100g baby spinach
2 spring onions, finely sliced
250g store-bought or homemade gyoza (vegetable or chicken)
1 teaspoon chili oil (optional, for serving)
Fresh coriander or sesame seeds for garnish (optional)
Instructions
- Heat sesame oil in a large saucepan over medium heat.
- Add minced garlic and grated ginger. Sauté for 1–2 minutes until fragrant.
- Pour in the vegetable broth, soy sauce, rice vinegar, and miso paste (if using). Stir to combine.
- Bring the broth to a gentle simmer, then add sliced mushrooms. Cook for 5–6 minutes until softened.
- Add the gyoza, ensuring they are fully submerged. Cook for 3–5 minutes or according to package instructions until they float and are cooked through.
- Stir in baby spinach and spring onions. Cook for another 1 minute until spinach wilts.
- Taste and adjust seasoning if needed.
- Ladle soup into bowls, drizzle with chili oil (if using), and garnish with coriander or sesame seeds.
- Serve hot.
Notes
Use frozen gyoza directly from the freezer—just cook them a little longer.
Swap spinach with bok choy or add extra vegetables like carrots or napa cabbage.
For added protein, use chicken gyoza or shredded cooked chicken.
Add rice noodles or Sriracha for variety or spice.
Store leftovers for up to 2 days in the fridge and reheat gently on the stove.
