Ingredients
4 medium russet potatoes
3 tablespoons olive oil or melted butter

Salt and pepper to taste
1/4 cup grated Parmesan cheese (optional)
Instructions
- Preheat the oven to 425°F (220°C).
- Wash and dry the potatoes. Slice them thinly (about 1/8-inch thick), keeping the base intact. Use chopsticks or wooden spoons to guide the slicing.
- Place the potatoes on a parchment-lined baking sheet.
- Drizzle olive oil or melted butter over the potatoes, ensuring it seeps into the slices.
- Sprinkle garlic, thyme, rosemary, salt, and pepper over the potatoes, making sure the seasoning penetrates the layers.
- Bake for 40-45 minutes, until golden and crispy.
- (Optional) Sprinkle Parmesan cheese on top during the last 5 minutes of baking.

For a vegan version, use olive oil instead of butter and skip the cheese.
