Description

Ingredients

4 medium russet potatoes

3 tablespoons olive oil or melted butter

2 cloves garlic, minced

1 tablespoon fresh thyme (or 1 teaspoon dried thyme)

1 teaspoon fresh rosemary, chopped (or 1/2 teaspoon dried rosemary)

Salt and pepper to taste

1/4 cup grated Parmesan cheese (optional)


Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Wash and dry the potatoes. Slice them thinly (about 1/8-inch thick), keeping the base intact. Use chopsticks or wooden spoons to guide the slicing.
  3. Place the potatoes on a parchment-lined baking sheet.
  4. Drizzle olive oil or melted butter over the potatoes, ensuring it seeps into the slices.
  5. Sprinkle garlic, thyme, rosemary, salt, and pepper over the potatoes, making sure the seasoning penetrates the layers.
  6. Bake for 40-45 minutes, until golden and crispy.
  7. (Optional) Sprinkle Parmesan cheese on top during the last 5 minutes of baking.
  8. Serve hot, garnished with fresh herbs if desired.

Notes

For a vegan version, use olive oil instead of butter and skip the cheese.

Add red pepper flakes or paprika for a spicy twist.

To ensure even cooking, use potatoes of similar size and slice uniformly.
