Description

Indulge in the tropical taste of our Hawaiian Banana Bread, a delightful and easy-to-make recipe that combines the sweetness of ripe bananas and pineapple with a hint of coconut.


Ingredients

1/2 cup softened butter

1 cup sugar

2 large eggs

1 very ripe banana, mashed

8 ounces crushed pineapple (do not drain)

2 cups flour

1 tsp baking powder

1/2 tsp baking soda

1/4 tsp salt

1/4 cup shredded coconut


Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5 inch loaf pan.
  2. In a large bowl, cream together butter and sugar until light and fluffy. Add eggs, one at a time, beating well with each addition.
  3. Mix in mashed banana and pineapple.
  4. In a separate bowl, sift together flour, baking powder, baking soda, and salt. Add to the banana mixture. Stir in coconut.
  5. Pour batter into the prepared loaf pan.
  6. Bake for 60 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let bread cool in the pan for 10 minutes, then turn out onto a wire rack.

Notes

For a nuttier flavor, add 1/2 cup of chopped macadamia nuts.

Store in an airtight container at room temperature for up to 3 days, or refrigerate for up to a week.
