Ingredients

4 boneless, skinless chicken thighs or breasts

1/4 cup pineapple juice (fresh or canned)

2 tablespoons rice vinegar

1 tablespoon sesame oil

2 cloves garlic, minced

1 tablespoon ginger, grated

1 tablespoon cornstarch (optional, for thickening)

1/4 cup water (if using cornstarch)

1 tablespoon sesame seeds (for garnish)

2 green onions, sliced (for garnish)


Instructions

  1. Prepare the Marinade:
    Mix soy sauce, pineapple juice, brown sugar, rice vinegar, sesame oil, garlic, and ginger in a bowl until combined.
  2. Marinate the Chicken:
    Place chicken in a resealable bag or dish. Pour marinade over the chicken. Refrigerate for 30 minutes to 4 hours.
  3. Cook the Chicken:
    Heat a grill pan or skillet over medium-high heat. Remove chicken from marinade, reserving the liquid. Cook chicken for 6-7 minutes per side or until the internal temperature reaches 165°F (74°C).
  4. Make the Sauce:
