Description

Hawaiian Wedding Cake is a tropical treat that combines the sweet flavors of coconut, pineapple, and macadamia nuts in a soft and moist cake, topped with creamy cream cheese frosting. Perfect for weddings, parties, or special occasions, this easy-to-make cake transports your taste buds to paradise.

Ingredients

For the Cake:

1 box yellow cake mix

1 cup unsweetened shredded coconut

1 (8 oz) can crushed pineapple, drained

1/2 cup chopped macadamia nuts (optional)

1/4 cup vegetable oil

3 large eggs

1 teaspoon vanilla extract

For the Cream Cheese Frosting:

8 oz cream cheese, softened

1/2 cup unsalted butter, softened

4 cups powdered sugar

1 teaspoon vanilla extract

2 tablespoons milk (adjust for desired consistency)

Instructions

For the Cake:

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large mixing bowl, combine the yellow cake mix, shredded coconut, drained crushed pineapple, vegetable oil, eggs, and vanilla extract. Stir until well combined.
  3. If using macadamia nuts, fold them into the batter.
  4. Pour the batter evenly into the prepared cake pans.
  5. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  6. Let the cakes cool in the pans for 10 minutes before transferring to a wire rack to cool completely.

For the Cream Cheese Frosting:

  1. Beat the softened cream cheese and butter together until smooth and creamy (about 2-3 minutes).
  2. Gradually add powdered sugar, one cup at a time, and beat until fluffy.
  3. Stir in vanilla extract, then add milk until you reach the desired consistency.

Assembling the Cake:

  1. Once the cakes are cooled, place one layer on a serving platter.
  2. Spread a generous amount of cream cheese frosting over the top.
  3. Place the second layer on top and frost the entire cake with the remaining frosting.
  4. Garnish with extra shredded coconut or macadamia nuts, if desired.

Notes

For a tropical twist, top with fresh fruit like mango or papaya.

Substitute the frosting with whipped cream or lighter buttercream for a fluffier texture.

Skip the macadamia nuts or replace them with other nuts, like toasted almonds or walnuts, for a nut-free version.
