Ingredients
2 tablespoons olive oil
1 large onion, diced
3 cloves garlic, minced
4 cups green cabbage, chopped
2 large carrots, sliced
3 stalks celery, sliced
1 large potato, diced
6 cups vegetable broth
1 teaspoon dried thyme
1 teaspoon smoked paprika
1 bay leaf
Salt and pepper to taste
2 tablespoons fresh parsley, chopped (optional)
Instructions
- Heat olive oil in a large pot over medium heat. Add diced onion and sauté for 4-5 minutes until translucent.
- Stir in minced garlic and cook for 1 minute until fragrant.
- Add chopped cabbage, sliced carrots, celery, and diced potato. Cook for 5-7 minutes, stirring occasionally.
- Pour in vegetable broth, and stir in thyme, smoked paprika, bay leaf, salt, and pepper. Mix well.
- Bring to a boil, reduce heat to low, and simmer for 25-30 minutes until vegetables are tender.
- Remove bay leaf, adjust seasoning, and serve hot with parsley garnish, if desired.
