Ingredients

2 large ripe bananas

2 eggs

1/2 cup creamy almond butter (or any nut butter of choice)

1/4 cup honey or maple syrup (adjust to taste)

1 teaspoon baking soda

1/2 teaspoon vanilla extract

1/2 teaspoon ground cinnamon

A pinch of salt, if using unsalted nut butter


Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a 9×5 inch loaf pan by greasing it or lining it with parchment paper.
  2. In a mixing bowl, mash the ripe bananas until smooth using a fork.
  3. Add the eggs, almond butter, honey or maple syrup, and any optional add-ins (vanilla extract, cinnamon, salt) to the mashed bananas. Stir until well combined.
  4. Sprinkle baking soda over the mixture and stir thoroughly.
  5. Pour the batter into the prepared loaf pan, spreading it out evenly.
