Description

This healthy breakfast apple crumble combines soft cinnamon-spiced apples with a crunchy oat and pecan topping lightly sweetened with honey. It’s a warm, comforting, and wholesome dish perfect for breakfast or a lighter dessert.


Ingredients

6 sweet apples, chopped

1 tbsp cinnamon

Pinch of salt

2 tsp coconut oil

2/3 cup oats

2/3 cup pecans

1 tbsp coconut oil

2 tsp honey

1 tbsp water


Instructions

  1. Preheat the oven to 180°C (350°F).
  2. Chop the apples into small pieces so they cook evenly.
  3. Heat a pan over medium-high heat and sauté the apples with cinnamon, salt, and 2 tsp coconut oil for about 2 to 3 minutes until they begin to soften.
  4. Place the oats, pecans, 1 tbsp coconut oil, honey, and water in a food processor or blender and blend until the mixture forms a sticky, crumbly texture.
  5. Lightly grease a small baking dish or line it with parchment paper.
  6. Spread the sautéed apples evenly across the bottom of the baking dish.
  7. Crumble the oat mixture over the apples, allowing small chunks to form for a crunchy topping.
  8. Bake for 15 to 20 minutes until the topping is golden brown.
  9. Allow the crumble to cool slightly before serving.

Notes

Walnuts or almonds can be used instead of pecans for a different nutty flavor.

Add raisins or chopped dates to the apples for extra natural sweetness.

Mix a pinch of nutmeg or ground ginger with the apples for a deeper autumn flavor.

Serve with Greek yogurt, milk, or nut butter for added protein at breakfast.

Store leftovers in an airtight container in the refrigerator for up to 4 days.

Reheat in the microwave for 30–40 seconds or in the oven at 160°C (320°F) for 8–10 minutes to restore crispness.

Use certified gluten-free oats if you need a gluten-free version.

The baked crumble can be frozen for up to 2 months and reheated in the oven.
