2 cups rolled oats

2 large apples, peeled and chopped
2 large eggs
1/4 cup honey or maple syrup
1 cup milk (dairy or non-dairy)
1 teaspoon vanilla extract
1/4 cup melted coconut oil or vegetable oil
1/4 cup chopped walnuts or pecans (optional)
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C). Grease a 9×9-inch baking dish or line it with parchment paper.
- Combine Dry Ingredients: In a large bowl, mix together the rolled oats, baking powder, ground cinnamon, ground nutmeg, and salt.
- Add Apples: Add the peeled and chopped apples to the dry mixture, tossing to coat.
- Mix Wet Ingredients: In another bowl, whisk together the eggs, honey or maple syrup, milk, vanilla extract, and melted coconut oil or vegetable oil.
