Ingredients

1 cup almond flour or whole wheat flour

½ teaspoon baking soda

¼ teaspoon salt

¼ cup coconut oil or melted butter

¼ cup honey or maple syrup

1 teaspoon vanilla extract

1 large egg

½ cup dark chocolate chips


Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
  3. In a separate large bowl, combine the melted coconut oil (or butter), honey (or maple syrup), vanilla extract, and egg, mixing until smooth.
  4. Add the dry ingredients to the wet ingredients, stirring until just combined. Gently fold in the dark chocolate chips.
  5. Scoop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 2 inches apart. Flatten each cookie slightly with the back of a spoon.
  6. Bake for 8–10 minutes, or until the edges are golden brown. Allow the cookies to cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

Store leftover cookies in an airtight container at room temperature for up to one week, or freeze for up to three months.

For a vegan version, replace the egg with a flax egg and use plant-based butter and dairy-free chocolate chips.
