Ingredients
1 cup almond flour or whole wheat flour
½ teaspoon baking soda

¼ cup coconut oil or melted butter
¼ cup honey or maple syrup

1 large egg
½ cup dark chocolate chips
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
- In a separate large bowl, combine the melted coconut oil (or butter), honey (or maple syrup), vanilla extract, and egg, mixing until smooth.
- Add the dry ingredients to the wet ingredients, stirring until just combined. Gently fold in the dark chocolate chips.
- Scoop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 2 inches apart. Flatten each cookie slightly with the back of a spoon.
- Bake for 8–10 minutes, or until the edges are golden brown. Allow the cookies to cool on the baking sheet for a few minutes before transferring to a wire rack.

For a vegan version, replace the egg with a flax egg and use plant-based butter and dairy-free chocolate chips.
