Ingredients
2 cups quick-cooking oats
1 teaspoon baking powder
1 egg
3/4 cup nut butter (almond, peanut, or cashew)
3/4 cup pure maple syrup or honey
1 teaspoon vanilla extract
3/4 cup dark or semi-sweet chocolate chips
Flaky salt for topping (optional)
Instructions
- Preheat your oven to 350°F (175°C). Line an 8×8-inch baking dish with parchment paper.
- In a large bowl, combine the oats and baking powder.
- In a separate bowl, whisk the egg, then stir in the nut butter, maple syrup or honey, and vanilla extract.
- Mix the wet ingredients into the dry ingredients until well combined. Fold in 1/2 cup of the chocolate chips.
- Spread the mixture evenly into the prepared baking dish. Sprinkle the remaining 1/4 cup of chocolate chips on top and gently press them into the surface.
- Bake for 25-30 minutes, or until the bars are golden and set.
- Remove from the oven and sprinkle with flaky salt while still warm. Let the bars cool completely in the pan before cutting into squares.
Notes
Nut Butter Variations: Choose almond, peanut, or cashew butter to suit your taste. Make sure the nut butter is smooth and not too oily.
Chocolate Chips: Dark or semi-sweet chocolate chips work best, but you can use milk chocolate for a sweeter treat.
Storage: Store at room temperature for up to 3-4 days, or refrigerate for up to a week. They also freeze well for up to 2-3 months.
