Ingredients
Cake:
1 cup mashed sweet potato (cooked and cooled)
2 large eggs
1/3 cup maple syrup or honey
1/4 cup unsweetened applesauce
1 tsp vanilla extract
1/2 cup whole wheat flour or all-purpose flour
1/4 cup unsweetened cocoa powder
1 tsp baking soda
1/4 tsp salt
1/4 cup dark chocolate chips (optional)
Glaze (Optional):
1/4 cup dark chocolate chips
1 tsp coconut oil
Instructions
- Preheat oven to 350°F (175°C). Grease or line an 8-inch round cake pan with parchment paper.
- In a large bowl, combine mashed sweet potato, eggs, maple syrup, applesauce, and vanilla extract until smooth.
- In a separate bowl, whisk flour, cocoa powder, baking soda, and salt.
- Gradually fold the dry mixture into the wet mixture until just combined. Fold in chocolate chips, if using.
- Pour the batter into the prepared pan and smooth the top.
- Bake for 20–25 minutes or until a toothpick inserted into the center comes out clean. Cool completely before removing from the pan.
- (Optional Glaze) Melt dark chocolate chips and coconut oil in a microwave or double boiler. Drizzle over the cooled cake.
- Slice and serve.
