Ingredients

Cake:

1 cup mashed sweet potato (cooked and cooled)

2 large eggs

1/3 cup maple syrup or honey

1/4 cup unsweetened applesauce

1 tsp vanilla extract

1/2 cup whole wheat flour or all-purpose flour

1/4 cup unsweetened cocoa powder

1 tsp baking soda

1/4 tsp salt

1/4 cup dark chocolate chips (optional)

Glaze (Optional):

1/4 cup dark chocolate chips

1 tsp coconut oil


Instructions

  1. Preheat oven to 350°F (175°C). Grease or line an 8-inch round cake pan with parchment paper.
  2. In a large bowl, combine mashed sweet potato, eggs, maple syrup, applesauce, and vanilla extract until smooth.
  3. In a separate bowl, whisk flour, cocoa powder, baking soda, and salt.
  4. Gradually fold the dry mixture into the wet mixture until just combined. Fold in chocolate chips, if using.
  5. Pour the batter into the prepared pan and smooth the top.
  6. Bake for 20–25 minutes or until a toothpick inserted into the center comes out clean. Cool completely before removing from the pan.
  7. (Optional Glaze) Melt dark chocolate chips and coconut oil in a microwave or double boiler. Drizzle over the cooled cake.
  8. Slice and serve.
