1 tablespoon olive oil
1 large onion, chopped
3 cloves garlic, minced
1 red bell pepper, diced
1 pound ground turkey
4 tablespoons chili powder
2 teaspoons ground cumin
1 teaspoon dried oregano
1/4 teaspoon cayenne pepper (optional)
1/2 teaspoon salt
1 (28 oz) can diced tomatoes
1 (15 oz) can tomato sauce
1 (15 oz) can kidney beans, drained and rinsed
1 (15 oz) can black beans, drained and rinsed
1 1/2 cups water or chicken broth
Fresh cilantro, for garnish (optional)
Instructions
- Heat olive oil in a large pot over medium heat. Add onion, garlic, and red bell pepper; sauté for 5-7 minutes until softened.
- Add ground turkey and cook until browned, breaking it up with a spoon, about 5-6 minutes.
- Stir in chili powder, cumin, oregano, cayenne pepper (if using), and salt. Cook for 1 minute to toast the spices.
- Add diced tomatoes, tomato sauce, kidney beans, black beans, and water or chicken broth. Stir to combine.
- Bring to a boil, then reduce heat and simmer uncovered for 30-40 minutes, stirring occasionally.
- Taste and adjust seasonings if needed. Serve hot, garnished with fresh cilantro if desired.
Notes
Adjust the spice level to your preference by increasing or reducing the cayenne pepper and chili powder.
For a thicker chili, simmer longer. For a thinner consistency, add a bit more water or broth.
