Ingredients
6 medium Yukon Gold potatoes, peeled and diced
1 medium yellow onion, chopped
3 cloves garlic, minced
4 tablespoons unsalted butter
4 cups vegetable broth
1 cup whole milk
1 cup heavy cream
2 cups sharp cheddar cheese, shredded
1/2 teaspoon dried thyme
1/2 teaspoon dried rosemary
1/2 teaspoon paprika
Salt and freshly ground black pepper to taste
2 tablespoons chopped fresh parsley (optional, for garnish)
1/4 cup chopped scallions (optional, for garnish)
Instructions
- Melt butter in a large soup pot or Dutch oven over medium heat.
- Add the chopped onion and garlic; sauté for 3–4 minutes until soft and aromatic.
- Stir in diced potatoes, thyme, rosemary, and paprika; cook for another 2 minutes.
- Pour in the vegetable broth and bring to a boil.
- Reduce heat to a simmer, cover, and cook for 15–20 minutes until potatoes are tender.
- Lightly mash some of the potatoes in the pot for a thicker texture.
- Stir in the milk and heavy cream; simmer for 5 more minutes.
- Gradually add shredded cheddar cheese, stirring until fully melted.
- Season with salt and freshly ground black pepper to taste.
- Serve hot, garnished with parsley and scallions if desired.
Notes
Use red or russet potatoes if Yukon Golds aren’t available.
For extra richness, add a dollop of sour cream or cream cheese at the end.
Stir in chopped spinach or kale for added greens and fiber.
Crumbled bacon or diced ham can add a smoky depth.
Add cayenne or hot sauce for a spicy twist.
Store leftovers in the fridge for up to 4 days; gently reheat with added milk or broth if thickened.
