Ingredients

For the Cake:

2 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1/2 cup unsalted butter, softened

1 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1/2 cup sour cream

3 ripe bananas, mashed

1/2 cup chopped walnuts

1/2 cup white chocolate chips

For the Filling and Topping:

2 cups creamy custard

1 banana, sliced (for garnish)

1/4 cup whole or halved walnuts (for garnish)

Instructions

  1. Preheat Oven:
Preheat to 350°F (175°C). Grease and flour two 8-inch round cake pans.
  2. Mix Dry Ingredients:
Whisk flour, baking soda, and salt in a medium bowl.
  3. Cream Butter and Sugar:
Beat butter and sugar until fluffy. Add eggs one at a time, then mix in vanilla.
  4. Combine Wet Ingredients:
Stir in sour cream and mashed bananas until smooth.
  5. Combine and Fold:
Gradually mix dry ingredients into wet mixture. Fold in walnuts and white chocolate chips.
  6. Bake:
Divide batter into pans and bake for 30-35 minutes. Cool for 10 minutes, then transfer to a rack.
  7. Assemble Cake:
Spread custard on the first cake layer. Add the second layer and top with more custard.
  8. Garnish and Serve:
Decorate with banana slices and walnuts. Serve immediately or refrigerate.

Notes

Ensure bananas are ripe for maximum sweetness.

Substitute walnuts with pecans, hazelnuts, or seeds for variations.

The custard can be homemade or store-bought but should be thick.
