Ingredients
Crust:
24 Lemon Oreo cookies, crushed
5 tablespoons unsalted butter, melted
Lemon Cream Layer:
8 oz cream cheese, softened
1 cup powdered sugar
1 teaspoon vanilla extract
1 cup heavy whipping cream, chilled
1/2 cup lemon curd (store-bought or homemade)
Topping (optional):
1 cup whipped topping
Lemon zest, for garnish
Extra Lemon Oreo cookies, crushed or whole, for garnish
Instructions
- In a bowl, combine crushed Lemon Oreos and melted butter until the mixture resembles wet sand. Press firmly into an 8×8-inch pan to form the crust, and refrigerate.
- Beat softened cream cheese until smooth. Add powdered sugar and vanilla, mixing well.
- In a separate bowl, whip heavy cream until stiff peaks form, then fold into the cream cheese mixture.
- Fold in lemon curd until well combined, then spread the lemon cream layer over the chilled crust. Cover and refrigerate for at least 3 hours.
- Before serving, top with whipped topping, lemon zest, and extra Lemon Oreos as garnish.
Notes
For best results, chill for at least 3 hours to ensure the dessert is set.
The dessert is best served cold and can be made up to a day in advance.
