2 ½ cups all-purpose flour
2 ½ tsp baking powder
½ tsp salt

1 cup crushed pineapple, drained
1 cup whole milk
1 cup white chocolate chips

1 cup heavy cream
¼ cup powdered sugar
1 tsp vanilla extract
1 ½ cups white chocolate, melted

½ cup shredded coconut

Instructions
- Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a medium bowl, whisk together the flour, baking powder, and salt.
- In a large bowl, cream the butter and sugar until light and fluffy. Beat in the eggs one at a time, then mix in the vanilla extract.
- Gradually add the dry ingredients to the wet ingredients, alternating with the milk. Mix until just combined.
- Fold in the crushed pineapple and white chocolate chips.
- Divide the batter evenly between the prepared pans and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Cool the cakes in the pans for 10 minutes, then transfer to a wire rack to cool completely.
- For the frosting, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form. Fold in the melted white chocolate.
- Frost the cooled cakes with the white chocolate frosting. Garnish with shredded coconut and white chocolate shavings if desired.
