Ingredients

For the filling:

3/4 cup granulated sugar

1/4 cup brown sugar

2 tablespoons all-purpose flour

1 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1/8 teaspoon ground allspice

1 tablespoon lemon juice

2 tablespoons unsalted butter, cubed

Optional topping:

1 egg, beaten (for egg wash)

1 tablespoon sugar (for sprinkling)


Instructions

  1. Prepare the crust:
    • In a large bowl, combine flour, salt, and sugar.
    • Cut in the butter until the mixture resembles coarse crumbs.
    • Add ice water, one tablespoon at a time, mixing until dough forms.
    • Divide into two disks, wrap in plastic, and chill for at least 1 hour.
  2. Make the filling:
    • Toss apple slices with sugars, flour, cinnamon, nutmeg, allspice, and lemon juice.
    • Let sit for 15 minutes.
  3. Assemble the pie:
    • Preheat oven to 375°F (190°C).
    • Roll out one dough disk and place in a 9-inch pie pan, trimming edges.
    • Fill with apple mixture, dot with butter.
    • Roll out second disk, place over filling, trim, crimp edges, and cut slits for ventilation.
  4. Bake the pie:
    • Brush top crust with beaten egg, sprinkle with sugar if desired.
    • Bake for 50-60 minutes, until crust is golden and filling bubbles.
    • Cool for 2 hours before serving.

Notes

Blind bake the bottom crust for 10 minutes to prevent sogginess.
