A classic homemade apple pie recipe with a buttery, flaky crust and a spiced apple filling. Perfect for holidays, family gatherings, or a cozy dessert at home.
Ingredients
For the crust:
2 1/2 cups all-purpose flour
1 cup unsalted butter, cold and cubed
1 teaspoon salt
1 teaspoon sugar
6–8 tablespoons ice water
For the filling:
6 cups thinly sliced apples (Granny Smith or Honeycrisp recommended)
3/4 cup granulated sugar
1/4 cup brown sugar
2 tablespoons all-purpose flour
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/8 teaspoon ground allspice
1 tablespoon lemon juice
2 tablespoons unsalted butter, cubed
Optional topping:
1 egg, beaten (for egg wash)
1 tablespoon sugar (for sprinkling)
Instructions
- Prepare the crust:
- In a large bowl, combine flour, salt, and sugar.
- Cut in the butter until the mixture resembles coarse crumbs.
- Add ice water, one tablespoon at a time, mixing until dough forms.
- Divide into two disks, wrap in plastic, and chill for at least 1 hour.
- Make the filling:
- Toss apple slices with sugars, flour, cinnamon, nutmeg, allspice, and lemon juice.
- Let sit for 15 minutes.
- Assemble the pie:
- Preheat oven to 375°F (190°C).
- Roll out one dough disk and place in a 9-inch pie pan, trimming edges.
- Fill with apple mixture, dot with butter.
- Roll out second disk, place over filling, trim, crimp edges, and cut slits for ventilation.
- Bake the pie:
- Brush top crust with beaten egg, sprinkle with sugar if desired.
- Bake for 50-60 minutes, until crust is golden and filling bubbles.
- Cool for 2 hours before serving.
Notes
Blind bake the bottom crust for 10 minutes to prevent sogginess.
Swap apples for pears or add caramel for variations.
Make crust ahead: Refrigerate up to 3 days or freeze for 2 months.
