Ingredients
1 1/2 cups pecan halves (toasted)
1 cup soft caramel candies (unwrapped)
2 tablespoons heavy cream
1 1/2 cups semi-sweet or milk chocolate chips
Sea salt (optional, for garnish)
Instructions
- Line a baking sheet with parchment paper. Arrange small clusters of 3-4 toasted pecan halves in groups, leaving space between each cluster.
- In a microwave-safe bowl, combine caramel candies and heavy cream. Microwave in 20-second intervals, stirring each time, until melted and smooth.
- Spoon the melted caramel onto each pecan cluster, covering the nuts while leaving edges exposed.
- Chill the clusters in the refrigerator for 10-15 minutes to allow the caramel to set.
- In another microwave-safe bowl, melt the chocolate chips in 20-second intervals, stirring until smooth.
- Spoon the melted chocolate over each caramel-covered cluster, spreading to cover the caramel. Optionally, sprinkle with sea salt.
- Let the chocolate turtles set at room temperature or refrigerate for faster setting. Once set, enjoy or package for gifting.
Notes
Toast the pecans beforehand to bring out their natural flavor.
You can swap semi-sweet chocolate for milk or dark chocolate depending on your preference.
If using homemade caramel, ensure it’s smooth and slightly chewy for the best texture.
Optional: Garnish with a light sprinkle of sea salt for added flavor contrast.
