Ingredients

2 cups old-fashioned rolled oats

1/2 cup chopped nuts (such as almonds, pecans, or walnuts)

1/2 cup honey or maple syrup

1/4 cup unsalted butter, melted

1/4 cup brown sugar, packed

1 teaspoon vanilla extract

1/4 teaspoon salt

1/2 cup chocolate chips (optional)


Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×9-inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.
  2. Spread oats and chopped nuts evenly on a baking sheet. Bake for 8-10 minutes, stirring halfway through, until lightly toasted. Remove from oven and transfer to a large mixing bowl.
  3. In a small saucepan, combine honey (or maple syrup), melted butter, brown sugar, vanilla extract, and salt. Heat over medium heat until mixture begins to bubble. Remove from heat.
  4. Pour honey mixture over toasted oats and nuts. Add chocolate chips, if using. Stir until evenly coated.
  5. Transfer mixture to prepared baking pan. Press firmly and evenly.
  6. Bake for 20-25 minutes until edges are golden brown.
  7. Cool completely in pan on wire rack. Lift bars out using parchment paper overhang. Cut into bars or squares.

Notes

Store granola bars in an airtight container at room temperature for up to one week, or refrigerate for longer freshness.
